EASY CHIPOTLE CHILI

Ingredients
2 pounds ground sirloin beef
1 large onion, diced
2 cloves garlic, minced
28 ounce can diced tomatoes
14 ounce can tomato sauce
30 ounces canned black beans, drained and rinsed
15 ounce can kidney beans, drained and rinsed
2 chipotle peppers in adobo, chopped
2 teaspoons Mexican chili powder
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon black pepper
1/2 teaspoon salt
olive oil cooking spray
Toppings:
low-fat sour cream
low-fat Mexican cheese
jalapenos
chopped cilantro

Instructions

  1. In a Dutch oven over medium heat, spray pan with olive oil cooking spray.
  2. Add the ground sirloin, diced onion, and minced garlic, saute until meat is brown, about 5 minutes. Drain any excess fat.
  3. Add in and combine the diced tomatoes, tomato sauce, drained black beans, drained kidney beans, chopped chipotle peppers, Mexican chili powder, dried oregano, ground cumin, black pepper, salt.
  4. Reduce heat to low and place the lid on Dutch oven and cook for about an hour. Stir occasionally.
  5. Check seasoning and adjust if needed.
  6. Ready to eat. Add toppings. Can be served with cornbread
