- 2 oz of KOYO Reduced Sodium Asian Vegetable Ramen
- 1 egg
- 1/2 cup kale
- 1 cup diced sweet potato
- Olive oil
- 1 tsp salt
- 1 tsp pepper
- Trader Joes' Everything But the Bagel Seasoning to season eggs
Instructions
- Wash, peel and diced sweet potatoes into cubes
- In an oven safe pan, add sweet potatoes, drizzle with olive oil, salt and pepper
- Heat oven on LOW broil setting and cook for 15 minutes, flipping halfway through
- Meanwhile, in a small pot add cold water, just enough so that it covers the egg by 1 inch
- Bring to a boil on high heat and reduce to simmer for 10-15 minutes
- In a separate pot, boil water on high heat and cook noodles according to package's instructions, then remove and season
- In a separate pan, add olive oil, pepper and salt, and sauté kale for 3-4 minutes on medium heat
- Go back to eggs, drain hot water and replace with cold water (let cold water stream on egg for 2-3 minutes)
- Carefully peel eggs
- By now the sweet potatoes should be done in the oven, carefully remove
- Add all ingredients to bowl
- ENJOY!
