HEALTHY BREAKFAST RAMEN

Ingredients

  • 2 oz of KOYO Reduced Sodium Asian Vegetable Ramen
  • 1 egg
  • 1/2 cup kale
  • 1 cup diced sweet potato
  • Olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • Trader Joes' Everything But the Bagel Seasoning to season eggs

Instructions

  1. Wash, peel and diced sweet potatoes into cubes
  2. In an oven safe pan, add sweet potatoes, drizzle with olive oil, salt and pepper
  3. Heat oven on LOW broil setting and cook for 15 minutes, flipping halfway through
  4. Meanwhile, in a small pot add cold water, just enough so that it covers the egg by 1 inch
  5. Bring to a boil on high heat and reduce to simmer for 10-15 minutes
  6. In a separate pot, boil water on high heat and cook noodles according to package's instructions, then remove and season
  7. In a separate pan, add olive oil, pepper and salt, and sauté kale for 3-4 minutes on medium heat
  8. Go back to eggs, drain hot water and replace with cold water (let cold water stream on egg for 2-3 minutes)
  9. Carefully peel eggs
  10. By now the sweet potatoes should be done in the oven, carefully remove
  11. Add all ingredients to bowl
  12. ENJOY!
