Ingredients:
Handful of Spinach
few leaves of Basil
½ tomato
¼ avocado
½ c quinoa
2 mushrooms
1 strip bacon
2 eggs
real sea salt and pepper
Add 1 large handful of Spinach chopped or ripped up into small pieces and place on a clean plate as the base
Sprinkle a few leaves of basil chopped into small pieces, in with the spinach layer – I keep a small basil plant on the widow sill and use most days, such the perfect plant smells and tastes amazing!
Chop up ¼ – ½ a tomato into pieces and make a circle around the outer parts of the plate
Add ½ cup cooked quinoa to the centre of the plate- I cook a whole lot at the beginning of the week and keep it stored in the fridge to have ready to eat for lunches and added to smoothies to beef them up a bit.
Cut the avocado in half, then cut long strips down one half of one of the halves (sorry sounds confusing) and then scoop out with knife or spoon and place on one side of the plate.
