GRILLED LEMON GARLIC CHICKEN KABOBS

INGREDIENTS
4 four oz chicken breasts
2 tbsp olive oil
Juice of one lemon
3 garlic cloves, minced
1 tsp dried oregano
¼ tsp each salt and freshly ground pepper
INSTRUCTIONS

  1. Cut chicken breasts into one inch cubes. Place in a deep dish and add the olive oil, lemon juice, garlic, oregano, salt and pepper. Toss to combine. Allow the chicken to marinate in the refrigerator for at least 30 minutes.
  2. A few minutes before grilling, thread the chicken cubes evenly across four skewers.
  3. Grill the chicken kabobs on medium heat, turning occasionally, for 12-15 minutes, or until the chicken is lightly browned around edges and no longer pink inside.
  4. Serve the chicken kabobs along with a whole grain pita, brown rice, roasted garlic potatoes or this spiralized Greek cucumber salad
