INGREDIENTS
4 four oz chicken breasts
2 tbsp olive oil
Juice of one lemon
3 garlic cloves, minced
1 tsp dried oregano
¼ tsp each salt and freshly ground pepper

INSTRUCTIONS
- Cut chicken breasts into one inch cubes. Place in a deep dish and add the olive oil, lemon juice, garlic, oregano, salt and pepper. Toss to combine. Allow the chicken to marinate in the refrigerator for at least 30 minutes.
- A few minutes before grilling, thread the chicken cubes evenly across four skewers.
- Grill the chicken kabobs on medium heat, turning occasionally, for 12-15 minutes, or until the chicken is lightly browned around edges and no longer pink inside.
- Serve the chicken kabobs along with a whole grain pita, brown rice, roasted garlic potatoes or this spiralized Greek cucumber salad
