Ingredients
1 box Penne pasta
1 lb. Shrimp uncooked (Your choice of size)
1 lemon
1 lb. Bay Scallops uncooked
1 cup cherry tomatoes washed and sliced in half
salt to taste
2 Jalapeno peppers seeded and sliced
1/4 cup onions carmelized
2 tbsp. olive oil
1/4 cup butter
4 tbsp. Cajun spice
1 tbsp. Black pepper
DIRECTIONS
1 box Penne pasta

1/4 cup butter
4 tbsp. Cajun spice

DIRECTIONS
- Rinse the scallops and shrimps under cold water for a minute or two.
- Add your shrimp and scallops to a large bowl. Season with salt, pepper and Cajun spice.
- Place in the refrigerator for 2 hours.
- Add your olive oil to a large cast iron pan. Turn the pan onto a medium to high setting. Now add your shrimp and scallops.
- Slice your lemon in half and squeeze the juice on the scallops and shrimp. Season with salt and pepper.
- Cook for 8-10 minutes until the shrimp and scallops are no longer transparent.
- Cast Iron Cajun Seafood Pasta- In Process
- Cook the Penne pasta as directed on the box.
- Remove the shrimp from the pan and set aside.
- Reduce the heat to low, add in the butter and diced jalapeños.
- Simmer on low for 5 minutes. Stir often so you do not burn the butter.
- Add the pasta and shrimp to the sauce and stir to combine.
- Garnish with lemon zest and serve.
