Cast Iron Cajun Seafood Pasta

Ingredients
1  box  Penne pasta
1 lb. Shrimp uncooked (Your choice of size)
1 lemon
1 lb.  Bay Scallops uncooked
1 cup cherry tomatoes washed and sliced in half
 salt to taste
2 Jalapeno peppers seeded and sliced
1/4 cup onions carmelized
2 tbsp. olive oil
1/4 cup butter
4 tbsp. Cajun spice
1 tbsp. Black pepper

DIRECTIONS 

  1. Rinse the scallops and shrimps under cold water for a minute or two.
  2. Add your shrimp and scallops to a large bowl.  Season with salt, pepper and Cajun spice.
  3. Place in the refrigerator for 2 hours.
  4. Add your olive oil to a large cast iron pan. Turn the pan onto a  medium to high setting. Now add your shrimp and scallops.
  5. Slice your lemon in half and squeeze the juice on the scallops and shrimp. Season with salt and pepper.
  6. Cook for 8-10 minutes until the shrimp and scallops are no longer transparent.

  8. Cook the Penne pasta as directed on the box.
  9. Remove the shrimp from the pan and set aside.
  10. Reduce the heat to low, add in the butter and diced jalapeños.
  11. Simmer on low for 5 minutes. Stir often so you do not burn the butter.
  12. Add the pasta and shrimp to the sauce and stir to combine.
  13. Garnish with lemon zest and serve.
