Classic Egg Salad Sandwich

INGREDIENTS:
6 large eggs
1/4 cup mayonnaise
1 tablespoon mustard
a dash of paprika
1 tablespoon chopped green onion
salt to taste
2-3 everything bagels (optional)

DIRECTIONS:

  1. Bring a pot of water to a boil. Lay the eggs gently in the water and boil them for 15 minutes. Remove from the stove and drain the water. Create an ice bath and put the boiled eggs in the water to help cool them off. Remove the shells and chop into large chunks.
  2. Add mayonnaise, mustard, paprika, green onion and salt to the egg chunks. Using a large spoon mix the mixture until everything is well coated.
