POTATO & CHIVE WAFFLES APPETIZER

Ingredients
2 eggs
1 cup mashed potatoes
1/2 cup mozzarella cheese shredded
1/2 cup cheddar cheese shredded
1/4 cup grated Parmesan cheese
2 tablespoons chives minced
Instructions

1. In a large bowl, beat eggs and then add the potatoes, cheeses and chives.
2. Mix well.
3. Add a scoop of the mixture in the middle of the waffle maker and cook according to manufacturer's suggestions. You may have to grease your waffle iron first but for my brand I did not have to.
4. This recipes made 12 medium sized waffles.
5. Serve with French onion dip.
