AVOCADO PESTO – DELICIOUS, GLUTEN FREE, VEGAN!

Ingredients
250 g Gluten Free Pasta
2 ripe Avocados flesh scooped out
1 Red Cayenne Pepper de-seeded and finely diced
2 cloves Garlic finely diced/minced
15 g Fresh Basil finely chopped
2 Limes Juice only
3 tsp Olive Oil extra virgin olive oil
Salt & Pepper to season to taste
Instructions
METHOD:

  1. Cook your pasta according to packet directions
  2. Add your avocado, lime juice, cayenne chilli, basil, garlic, olive oil and salt to the food processor. Blitz until smooth (it won't take long as you have already chopped and diced where required) to make your Pesto sauce.
  3. Drain the pasta and put back into the pot. Over low heat toss through the pesto.
  4. Sprinkle red chilli flakes to taste over each serve and garnish with some chopped basil.
